Have you ever had a St. Patty’s Day meal worth shaking your shillelagh over? Maybe it was a plateful of Sheppard’s pie or Dublin coddle. Or perhaps a smattering of soda bread and cheese spread. Either way, we’re betting that you never thought about celebrating an Irish holiday with bbq sauces. And that my friends, is hopefully about to change.

Irish cuisine isn’t all about corned beef and cabbage simmering in crock pots. Why there’s even an Irish BBQ Association. How’s that for proof that Irish lads and lassies love barbecue foods just as much as Americans? So what’s good for St. Patty’s Day barbecues? Anything really, but grilling meats and potatoes are preferred.

Slather the meats with barbecue sauce and don’t be afraid to tweak Bubbah’s best with a bit of Irish whiskey. The peaty kind generally works best but feel free to let your inner Irish muse guide you to another section of the liquor cabinet. Oh, and add just a nip at a time to the sauce, otherwise, the whiskey flavor may end up being too overwhelming. This may be particularly the case if you plan on making a whiskey or bourbon au jus.

Most au jus recipes call for one to one ratio of whiskey and stock. They also tend to include an equal measure of heavy cream and minced onions along with assorted flavor enhancers. Examples include, but are not limited to salted butter, peppercorns, mustards and hot sauces. The mustards, by the way, go exceptionally well with grilled corn beef and center cut pork chops.

Top of the morning to ya! If there is anything that gets Irish eyes smiling at this time of day, it's meat snacks and loaded potatoes! So we’ve put together a few meal ideas that will help you bring the family’s littlest leprechauns to the table with an impish twinkle in their eyes. Our first classic Irish dish starts with hickory-smoked ham roll and beef summer sausage.

Most full Irish breakfasts include two types of meat snacks, baked beans, eggs, roasted tomatoes, potatoes, sautéed mushrooms and two types of pudding. They are normally served alongside of Irish soda bread, assorted spreads, teas and juices. For our Americanized version of the dish, we’d suggest pan frying slices of our perfectly seasoned, hickory-smoked ham roll and summer sausage. However, you could opt to use gourmet hard salami, super stick pepperoni, old-fashioned bologna or Canadian style bacon instead.

As for the puddings, the traditional dish calls for black and white. Because many Americans tend to shy away from European style puddings, we’d suggest sticking with an extra helping of creamy braunschweiger liverwurst or cooked oatmeal. It won’t be the same, but the kids are likely to find it more palatable.

When it comes to the baked beans, consider kicking them up a notch. Add a small amount of horseradish products or hot sauces to them before filling up the kids’ plates. The potato pancakes could be made into something extra special too with the introduction of horseradish or Wisconsin specialty cheeses. There are a lot of different cheese flavors to consider, including horseradish cheese. We’d also suggest bringing cheese spreads to the table, which could be paired with the Irish soda bread.

If a full Irish breakfast sounds like too much for your kids to handle, don’t worry. You could always serve scrambled eggs, loaded home fries, Irish soda bread and cheese spreads instead.
