Horseradish Recipes to Make Your Lips Tingle with Pleasure!

Apple Parsley Coleslaw

  • large Golden Delicious apple, peeled and cored
  • 1 parsnip, peeled and trimmed
  • wedge of red cabbage, about 6 ounces
  • 1 medium carrot, peeled and trimmed
  • 1/2 small red onion, sliced thin
  • 2 tablespoons prepared horseradish
  • 1/4 cup cream
  • 2 teaspoons honey
  • salt
  • fresh cracked black pepper
  • lemon wedges

Shred all the vegetables and apple, either with the grater disk of a food processor, or by hand with a box grater. Place in a medium bowl. Add onion to the bowl.In a measuring cup, combine the cream honey and horseradish and mix well.Pour cream mixture over the vegetables and toss to combine, until it's all well coated, season with salt and pepper to taste. Squeeze a couple of lemon wedges over the coleslaw mix and chill before serving (if you like raisins it is excellent with those added in as well).

Horseradish Sauce

  • 3 Tbsp prepared horseradish
  • 1 teaspoon Dijon mustard
  • 1/4 cup sour cream
  • 1 Tbsp mayonnaise
  • 1 Tbsp chopped chives

Mix ingredients together. This sauce is fabulous with hot or cold sausage, beef or pork. It is the perfect amount of bite to make your meal fabulous!

It makes a heckuva chip dip, a sauce for everything from Prime Rib to a roast beef sandwich and an exquisite accompaniment to seafood of any type. It opens up the sinuses, makes the eyes water and the brain freeze. No, it’s not ice cream, it’s horseradish. It’s been used as both medicinal and condiment since the Egyptians. No one seems to know the origins of the root, but its good effects have been clearing respiratory tracts around the world.

History

The main ingredient of horseradish products has a bit of a sneaky history. It is thought to be first described by Pliny the Elder as Armoracia, a member of the broccoli family. It has appeared from Russia to Europe as Cochlearia macrocarpa, a plant closely resembling and used much like Armoracia, but slightly different. So we have a plant masquerading as another and appearing right about the same time-frame, around 3,000 years. People looked askance at it at first, but soon found comforting uses for it.

Medicinal Uses

In olden times, horseradish was used as an expectorant, a rub for arthritis and other joint aches, a cure for chilblains and much more. Taken internally, the root clears the chest, helps with flu and cold symptoms, aids the digestion and is a diuretic. Modern science, however, has found a new facet of the root to be useful, which is glucosinolates. These aid the liver in “detoxifying carcinogens and may suppress the growth of tumors” reports research entity Life Extension. Horseradish’s antibiotic properties fight urinary tract infections, coughs and bronchitis. Got muscles aches or dandruff? Use horseradish. Searching for an aphrodisiac? You got it. Horseradish. This is one of the few roots for which processing actually increases its medicinal efficiency.

Condiment

It wasn’t until the 17th century that horseradish began to be used as a condiment. The root was mainly used by persons performing hard labor jobs and country folk. No one knew what to do with it, so they tried it on everything. Traditionally used on meats and seafood, prepared horseradish sauces can be used in a variety of ways such as:

  • Mix two teaspoons Deli Direct Super Hot Horseradish Sauce with one quarter cup sour cream as a baked potato topper
  • Combine four strips of finely chopped bacon, one quarter cup sour cream, two teaspoons Deli Direct Super Hot Horseradish Sauce, salt and pepper to taste and one pound of Brussels sprouts. Cook until sprouts are done, about 20 minutes
  • Stem 24 mushrooms and dip them in butter. Place on a cookie sheet. Stuff mushrooms with one clam. Top these with a mixture of five tablespoons Deli Direct Super Hot Horseradish Sauce, eight tablespoons mayonnaise and one teaspoon Worcestershire. Broil for approximately eight minutes or until ingredients are browned
  • Mix one tablespoon Deli Direct Super Hot Horseradish Sauce, one tablespoon Dijon mustard and one tablespoon fresh chopped parsley into one half cup mayonnaise for an eye-opening beginning to a great sandwich

  • 1 cup sour cream
  • 1/4 cup horseradish
  • 1 tablespoon Dijon mustard
  • 1 teaspoon white wine vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Whisk all ingredients in a bowl until well-blended. Refrigerate for at least four hours so flavors can blend. Will keep in the refrigerator for up to three weeks. Enjoy!
