So, if you are going to serve a summer sausage on an October afternoon, choose a German beer to match. Smoky, spiced varieties tend to pair well with strong stouts and amber lagers. And let’s not forget the Braunschweiger liverwurst. It generally stands up well to a robust brew too. Light sausages, on the other hand, are probably best served with one of Germany’s pale ales.

We know that quite a few Germans will also be slicing up cheese to go with those summer sausages. So we’ve put together a few meal ideas that will help you bring the family’s littlest leprechauns to the table with an impish twinkle in their eyes. Our first classic Irish dish starts with hickory-smoked ham roll and beef summer sausage.

Most full Irish breakfasts include two types of meat snacks, baked beans, eggs, roasted tomatoes, potatoes, sautéed mushrooms and two types of pudding. They are normally served alongside of Irish soda bread, assorted spreads, teas and juices. For our Americanized version of the dish, we’d suggest pan frying slices of our perfectly seasoned, hickory-smoked ham roll and summer sausage. However, you could opt to use gourmet hard salami, super stick pepperoni, old-fashioned bologna or Canadian style bacon instead.

As for the puddings, the traditional dish calls for black and white. Because many Americans tend to shy away from European style puddings, we’d suggest sticking with an extra helping of creamy braunschweiger liverwurst or cooked oatmeal. It won’t be the same, but the kids are likely to find it more palatable.

When it comes to the baked beans, consider kicking them up a notch. Add a small amount of horseradish products or hot sauces to them before filling up the kids’ plates. Simply combine a cup of the creamy liverwurst deli meat along with ½ cup of onion-flavored sour cream, 2 tablespoons of pickle relish, ½ teaspoon of garlic powder and 1 tablespoon of horseradish mustard together. Then serve it alongside of the dippers of your choice or use it as a topping.

Savory Scallion Cakes

Speaking of which, savory scallion cupcakes and pancakes taste great topped with liverwurst dip. The cakes are normally made with shredded cheese, chopped scallions and sour cream. Recipes that explain how to make the cakes are available all over the internet. However, most of those cakes are topped with scallion flavored cream cheese. We say skip the cream cheese and go with deli meat inspired toppings instead!

Meatballs and Spaghetti

Liverwurst may also be combined with ground beef or tomato sauce for a kick butt version of spaghetti and meatballs.
